Yes indeed, I have a VPS running Ubuntu. It's easy af to setup Eclipse on it. Load it and your done.

Ah, I remember my Hackintosh days.. Really easy by the way to fix that OpenGL issue. Just install Apple's JRE 6. Make your client run through Eclipse using the JRE 6 library or set it as the default Java, and enjoy playing with OpenGL. It really doesn't need a video tutorial, simple as that.

I personally use Ubuntu Server 14.04 with the MATE GUI. It runs great for my server, and it does a great job for my other PC's too. So I'd recommend you to try it out, perhaps even with different desktops: Gnome, MATE, XFCE etc. etc.
